1 bottle of wine
2 cinnamon sticks
10 cardamom seeds
8 whole cloves
A handful of almonds
A good amount of honey (4 tbsp in modern measurements; sugar works, too)
Combine all ingredients in a pot (modern saucepan) and heat to a simmer over medium-high heat. Do not allow to boil! Reduce heat to medium-low, cover, and simmer for an hour. Remove cover and cool to lukewarm. Strain and serve.

Leg of Lamb with Mint and Garlic Butter
1 leg of lamb, 3-4 lbs
2 oz butter
1 tsp salt
1/2 tsp black pepper
1/4 cup chopped parsley
1 wild garlic
1/2 onion, chopped
1 tbsp fresh mint
1/4 cup breadcrumbs
Place leg of lamb in a roasting pan. Mix the ingredients and spread over the meat. Place in an oven, preheated to 175 C (360 F), roast for 1 1/2 – 2 hours. Let rest for 10 minutes. Serve!
